FRESH ASPARAGUS SALAD (BROCCOLI) 
1 lb. asparagus
2 tbsp. soy sauce
1 tsp. sugar
2 tsp. sesame-seed oil

Slice asparagus in 1-inch lengths on diagonal. Wash in cold water. Boil 2 quarts water. Drop in asparagus and boil for only 1 minute. Drain immediately and run cold water over them. Spread on double thickness of paper towel and pat dry.

Combine soy sauce, sugar and oil. Mix until sugar is completely dissolved. Add asparagus and toss in bowl with spoon. Chill slightly.
