STIR-FRY CHICKEN AND BROCCOLI | |
1 pkg. boneless chicken breasts 1 head of broccoli 4 green onions 1 c. fresh mushrooms 1 c. cherry tomatoes Rinse chicken and slice into 1/2 inch strips. Put chicken in a medium bowl and sprinkle with 1 tablespoon of cornstarch and 2 tablespoons of soy sauce. Stir and let stand while other ingredients are prepared. Cut broccoli into small bite size pieces using only tender parts. (Throw away stems). Slice green onions into 1/4 inch pieces. Slice fresh mushrooms and halve cherry tomatoes. COOKING: In a heavy skillet heat 1/4 cup oil. When hot drop chicken into oil. Fry, stirring occasionally, until chicken is browned and almost done. Remove chicken from skillet. Add a little more oil and heat. Add broccoli, stir and cook for a few minutes. Add onions and mushrooms. Continue frying for a few more minutes. Mix chicken into vegetables. Add tomatoes and heat through. Vegetables should be crunchy. Serve over rice. You may add garlic and/or ginger to the chicken while it is marinating. You may also add 1/2 cup chicken broth to mixture after you have added the tomatoes. |
