CHEESY EGG CASSEROLE 
1/4 c. all-purpose flour
1/4 tsp. salt
1/4 c. butter, melted
4 eggs, beaten
1 c. cottage cheese
4 oz. can chopped green chilies, drained
8 oz. shredded Monterey Jack cheese
4 oz. jar whole pimentos
Green pepper

Combine flour, salt, and butter in a large bowl. Add eggs, cottage cheese, chilies and cheese. Mix well. Pour mixture into a lightly greased 10x6x2 baking dish. Garnish casserole with pimentos and green pepper. Bake uncovered at 375 degrees for 30 minutes. 6-8 servings.
