CHEESY EGG CASSEROLE 
1/4 c. all-purpose flour
1/4 tsp. salt
1/4 c. butter, melted
4 eggs, beaten
1 c. cottage cheese
1 (4 oz.) can chopped green chiles, drained
2 c. (8 oz.) shredded Monterey Jack cheese
1 (4 oz.) jar whole pimentos
Green pepper

Combine flour, salt and butter in a large bowl. Add next 4 ingredients; mix well. Pour mixture into a lightly greased 10 x 6 x 2 inch baking dish. Garnish with pimento and green pepper. Bake, uncovered at 375 degrees for 30 minutes. Yield 6-8 servings.
