INCREDIBLE BRUNCH 
1 loaf French bread
1 1/2 lbs. grated Cheddar
9 eggs
4 c. milk

TOPPING (choose 1 or 2) :
Bacon crumbles
Sausage
Green chilies; tomatoes or olives

Make ahead the night before serving: Cube the bread into inch cubes. Layer the bread into a 9 x 13 inch casserole dish and spread the cheese on top. Beat together the eggs and milk and pour this mixture over the cheese. Refrigerate overnight. Preheat the oven to 350 degrees. Bake the brunch for 45 minutes, during the last 15 minutes put the precooked bacon (sausage) atop the mixture or replace the meat with the chilies, tomatoes or olives. Serves 6-8.
