BRUNCH CASSEROLE 
1 (6 oz.) pkg. dry hash brown potatoes
1 1/2 c. water
1 1/2 c. Cheddar cheese, shredded
1 c. milk
1 c. ham, finely chopped or ground
1/2 c. green onions, sliced, with tops
1 tsp. dry mustard
5 eggs, beaten
Dash of cayenne pepper
Paprika

Heat oven to 350 degrees. Mix all ingredients together, except paprika. Pour into ungreased rectangular baking dish, 12 x 7 x 1 1/2 inches. Sprinkle with paprika. Bake until knife inserted in center comes out clean, 40 to 45 minutes. Serves 6.
