BRUNCH CASSEROLE 
8 slices of bread
2 c. diced ham (or browned crumbled sausage may also be used)
8 to 10 eggs (depending on size)
3 to 4 c. milk
2 tsp. dry mustard
1 tsp. salt
1 to 2 c. shredded Cheddar cheese

Line bottom of a 9 x 13 inch pan (ungreased) with the 8 slices of bread (remove crusts). This should cover the entire bottom of the pan. Top with the diced ham. In a mixing bowl beat eggs, add milk, mustard and salt. Pour egg mixture over bread and ham.

Top with the shredded cheese. Cover with foil and refrigerate overnight. Bake at 350 degrees for about 40 minutes or until lightly browned and set.

This is great to take to a breakfast brunch or if you have overnight guests and want a quick and easy breakfast.
