THANKSGIVING CRANBERRY RELISH | |
From my Sister Linda's Thanksgiving Day Feast :) 1 bag fresh cranberries 1/2 cup pecan pieces 1 cup sugar 1 small box jello (cherry/strawberry) orange zest (optional) Wash/rinse fresh cranberries. In a food processor chop cranberries into small pieces, add to large mixing bowl along with nuts, adding 1 cup of sugar on top of mixture. Cover mixture and set aside at room temperature. Prepare one small box of cherry/strawberry jello according to box directions, then refrigerate until slightly congealed (do not let jello set up. Once jello is slightly congealed, mix berries/nuts/sugar together (by folding in). At this point the sugar would have started to macerate while setting; pour jello mixture into the berry mixture stirring lightly, then refrigerate overnight. Superb! Do not cook cranberries, this recipe calls for fresh uncooked berries. Enjoy ~ (the relish actually tastes like apples have been added) Submitted by: Caroline Cantrell |
