SPONGE JELLY ROLL 
3 eggs
1 c. cake flour
1 tsp. baking powder
1/4 tsp. salt
1 tsp. lemon extract
1 c. sugar
1/4 c. cold water
2 tsp. hot, melted butter

Sift flour, baking powder and salt. Beat eggs to a froth. Add sugar, water, extract and flour, beating well after each ingredients with egg beater. Whip in melted butter. Pour into pan. Bake and roll using tart jelly for filling, slightly warmed and beaten to a paste.
