PUDDING OR PIE MIX 
PUDDING MIX:

1 c. cornstarch
3 c. sugar
2 tsp. salt

Mix. Keep stored in covered container.

For cream pie, filling or pudding: 2 egg yolks 2 tbsp. butter 2 1/2 c. scalded milk 1 tsp. vanilla

For chocolate pie filling or pudding: 2 1/2 c. scalded milk 2 egg yolks 3 tbsp. cocoa

Lemon pie filling or pudding: 2 c. hot water 2 egg yolks 1/2 c. lemon juice 2 tsp. grated lemon rind

Butterscotch pie filling or pudding: 2 egg yolks 2 tbsp. butter 1 c. brown sugar 2 c. scalded milk
