“JIFFY CORN CASSEROLE” IS IN:
NEXT RECIPE:  MACARONI AND CHEESE

JIFFY CORN CASSEROLE 
1 can whole kernel corn, drained
1 can creamed corn
2 eggs, beaten
1 box Jiffy corn muffin mix
1 stick butter, melted (or 1/2 cup oil)
1 cup dairy sour cream
1/4 to 1/2 tsp. garlic powder (optional)
Shredded cheese (optional)

Preheat to 350°F. Mix all ingredients except cheese. Sprinkle shredded cheese on top, if desired.

Bake in casserole dish or 9x13-inch baking dish for 30 to 45 minutes or until fully cooked in center.

Variation: Add chopped chives or green onions.

We love to add browned bacon, onion and peppers and delete the sour cream then cook on indirect heat in the smoker for 1 to 1.5 hours at 225°F, adding the cheese about 10 minutes before removing (otherwise the cheese gets too strong with smoke).

I don't add the garlic powder or cheese but when it is finished you can add maple syrup. My whole family says it taste like pancakes!

Yummy!!!!!!! I varied the recipe Like Scot suggested with a bit of onion, bacon, red pepper, I omitted the jalepenos tho, cause of all the older folks (but I would have luved it) Like this varied recipe alot better then the original. Thanks!

Julia, I wonder if your mom made scalloped pineapple. My coworker just made it and it was very good although rich. Her recipe called for bread, eggs, sugar, milk and pineapple. Happy thanksgiving!
