POLYNESIAN PORK ROAST 
2 1/2 lbs. boneless lean pork loin
3/4 c. creamy peanut butter
1/2 c. finely chopped toasted walnuts
3 tbsp. soy sauce
2 tbsp. ground coriander
1 tbsp. ground cumin
1/2 tsp. chili powder
1 1/2 clove garlic, crushed
1 tbsp. lemon juice

Make a paste of peanut butter and walnuts. Add remainder of ingredients. Rub well and evenly over pork. Let marinate for 45 minutes. Place in roasting pan with a little oil. Roast in medium oven (350 degrees) until done and nicely browned. Let stand 15 to 20 minutes and slice into portions. Serve with Walnut Sauce. Serves 6.

WALNUT SAUCE:

1 c. soy sauce
2 tbsp. pineapple juice
1 clove garlic, crushed
1/4 c. sherry
1/2 c. chopped walnuts
3/4 tsp. minced fresh ginger

Mix soy sauce with rest of ingredients and bring to a boil. Serve from gravy boat.
