STRAWBERRY SOUFFLE 
2 c. fresh strawberries or 2 c. frozen whole strawberries without sugar
1 c. sugar
1 tbsp. fresh lemon juice
1 tsp. vanilla
2 egg whites
Whole strawberries or chocolate shavings for garnish

In large bowl of electric mixer, combine strawberries, sugar, lemon juice, vanilla and egg whites. Beat at medium speed 15 minutes, or until mixture is quite stiff and shiny. Pour into lightly-greased springform pan and freeze at least 4 hours or overnight.

Remove from freezer 5 minutes before serving time and place on serving plate. Remove sides of pan carefully and decorate souffle with whole strawberries and/or chocolate shavings. Makes about 10 servings.
