STUFFED GREEN PEPPERS 
6 lg. green peppers
1 lb. ground beef
2 tbsp. chopped onion (optional)
1 tsp. salt
1/8 tsp. garlic salt
1 c. cooked rice
1 can (15 oz.) tomato sauce
1 pkg. grated Mozzarella cheese
Velveeta cheese

Cut tops off peppers and clean insides. Wash. Cook peppers in salted water for 5 minutes. Drain. Brown ground beef and onion. Drain off fat. Stir in salt, garlic salt, rice and 1 cup of tomato sauce. Heat thoroughly. Remove from heat and stir in Mozzarella cheese. Stuff each pepper with 1/2 cup mixture.

Put peppers (upright) in ungreased baking dish. Pour remaining tomato sauce over peppers. Cover and bake at 350 degrees for 45 minutes. Uncover and bake 10 minutes longer. Cover each pepper with a slice of Velveeta. Return to oven until cheese melts.
