CREAMY CHICKEN CASSEROLE 
4 chicken breast halves, cooked, deboned
1 (10 oz.) pkg. frozen broccoli pieces
1 c. grated mild cheese
1 can cream of chicken soup
1/4 tsp. curry powder
1/2 tsp. lemon juice
1/4 c. mayonnaise
1 c. croutons or onion rings

Boil chicken breasts in water and 1 tablespoon salt. Chicken will peel off bones easily when done. Debone all chicken. (For quick preparation, cook and debone chicken the night before.) Cook broccoli according to package instructions.

Grease casserole dish and preheat oven to 350 degrees. Mix soup and curry powder, lemon juice and mayonnaise to make sauce mixture.

Layer the chicken and broccoli covering with sauce. Add cheese between layers and on top. Garnish with croutons or onion rings. Bake 30 minutes.

NOTE: If using onion rings, cook the casserole 25 minutes, then add the rings the last 5 minutes to prevent burning.
