SOFESOFE FA'I (BAKED RIPE
BANANAS IN COCONUT MILK)
 
12 ripe bananas
1 c. coconut milk
1/2 c. brown sugar

Peel bananas. Slice lengthwise in halves. Place side by side in a baking pan lined with foil. Pour coconut milk over bananas. Sprinkle brown sugar over them. Bake in preheated oven at 375 degrees for 30 minutes. Serve warm or cold.

I did this and added walnuts on top, as well as coconut flakes and chocolate flakes. Awaiting how it will taste...YUM! My question is how do you pronounce, Sofesofe Fa'i! :)

We tried it last night. We live in FL, we got a lot of bananas from our backyard. I followed the instructions and they were just amazing!!!! Great to serve next to vanilla ice-cream or over a piece of pie! Delicioso!

Sofesofe fa'i (soh-fay soh-fay FAH ee) is a rich island treat. I make it with an added pinch of salt, and just a light sprinkle of sugar. This is actually yummy to serve as a side dish with a pork roast or pork chops. Or even next to a savory beef curry. :-)
