BANANA FRITTERS | |
1 c. all purpose flour 2 tsp. sugar Pinch of salt 1/2 tsp. baking powder 1/4 c. milk 1 egg 1 tbsp. melted butter 1 tsp. vanilla 3 lg. bananas, cut in big chunks Corn oil for frying Beat together flour, sugar, salt, baking powder, milk, egg, butter and vanilla. Batter should be smooth and the consistency of pancake batter. Heat 2" of oil to 375 degrees. Dip bananas into batter and drop into hot oil. Fry for 5 or 6 minutes or until golden brown. Drain on paper towel. Serve warm, sprinkled with confectioners' sugar. |
