STUFFED GREEN BELL PEPPERS 
2 medium green bell peppers
5 or 6 baby carrots
3 whole mushrooms, sliced
2 scallions
handful of fresh spinach
1 clove garlic, minced
2 cups prepared brown rice
1 lb. lean ground turkey
2 cups pasta sauce (I use low sodium/low sugar)
freshly ground pepper
cayenne pepper
olive oil

Preheat oven to 350°F. Prepare rice as directed on package, set aside.

Cut the tops off the peppers and scrape seeds/insides out, put hollowed peppers into oven until tender (about 8 minutes) and set aside.

Heat 1 tablespoon olive oil in pan. Cut around stem and dice usable parts of peppers, carrots, mushrooms, scallions and spinach. Add ground pepper and carrots to heated olive oil until tender, add mushrooms, scallions, spinach, garlic, freshly ground and cayenne pepper. Combine with cooked rice and set aside.

Cook ground turkey, drain excess fat, return to low heat and add pasta sauce.

Layer rice mixture and meat mixture (about 2 layers of each) and put into oven for 10 to 12 minutes.
