BEST EVER RICE PUDDING 
1 qt. half and half
1 qt. milk
1/2 c. plus 2 tbsp. rice (not instant)
1/2 tsp. salt

In large saucepan, bring the half and half, milk, and salt to a boil; then add rice. Boil gently 45 to 50 minutes. Keep stirring down as mixture rises while gently boiling. In the meantime, beat 2 eggs. Mix in 3/4 cups sugar and 1 teaspoon vanilla. Add this to boiled mixture as soon as you feel it thickening.

Mix as you pour it in. Let boil for 1 minute more and then pour into a casserole and sprinkle with cinnamon. Raisins may be added at the very end. This will keep well for days in the refrigerator.
