ITALIAN CREAM CAKE | |
2 c. sugar 1 stick butter 1/2 c. cooking oil 5 egg yolks 2 c. flour 1 tsp. baking soda 1 c. buttermilk 1 sm. can coconut 5 egg whites Cream sugar, butter and cooking oil thoroughly. Add 5 egg yolks, one at a time, beating after each addition. Combine flour and soda. Combine in other bowl buttermilk and coconut. Add flour mixture and buttermilk mixture to sugar mixture, alternating as you mix. Beat 5 egg whites until stiff, fold into mixture. Bake 25 minutes at 350 degrees in 3 greased round cake pans. Top with Cream Cheese Frosting. CREAM CHEESE FROSTING: 1 lb. powdered sugar 1 stick butter 8 oz. cream cheese 1 tsp. vanilla 1/2 c. chopped pecans Cream together first 4 ingredients until creamy. Add pecans, mix well. Sprinkle coconut over the cake. |
