SATURDAY NIGHT HOAGIES 
8 hoagie rolls
1 lb. ground beef
1 lg. onion, chopped
2 cloves garlic, chopped
1 egg
1 tsp. Dijon mustard
2 tbsp. chopped parsley

Cut rolls lengthwise. Remove centers. Chop centers into crumbs. Saute ground beef. Drain. Saute onions and garlic in drippings.

Combine onions, crumbs, and beef in large bowl. Add eggs, mustard, and parsley, set aside. Spread cheese mixture on top and bottom of rolls. Spread meat mixture on top of cheese mixture. Place roll halves together and wrap in foil. Bake at 350 degrees until cheese melts, 15 minutes. Cut in servings.

CHEESE MIXTURE FOR HOAGIES:

3/4 c. sharp cheese, grated
1/4 c. Parmesan cheese
1 tsp. oil
1/2 tsp. pepper
2 tsp. Dijon mustard
