SAVORY LENTILS (DHA)

3 c. water
1 c. dried lentils
1 tsp. salt
1 tsp. ground turmeric
1 med. onion, chopped
1 tsp. ground cumin
1 tsp. curry powder
1/4 tsp. ground cardamom
2 tbsp. vegetable oil
1/4 tsp. crushed red pepper

Heat water and lentils to boiling. Stir in salt and turmeric. Cover and simmer 45 minutes.

Meanwhile, cook and stir onion, garlic, cumin, curry powder, cardamom and crushed red peppers in oil on medium, about 10 minutes. Stir into lentils and cook, uncovered on low heat, stirring frequently, about 30 minutes. Serve over rice with toasted pita bread.
