SWEET POTATO - CASHEW BAKE 
1/2 c. brown sugar, packed
1/2 c. broken cashews
1/2 tsp. salt
1/4 tsp. ground ginger
1/2 to 1 tsp. cinnamon
2 lbs. sweet potatoes, peeled, cooked, cut crosswise into thick chunks
1 (16 oz.) can sliced peaches
1/2 (20 oz.) can crushed pineapple
3 tbsp. butter
Mini marshmallows

Combine sugar, cashews, salt and spices. In a 10 x 6 x 2 inch baking dish layer 1/2 the sweet potatoes, 1/2 the fruit and 1/2 the brown sugar mixture. Repeat the layers, dot with butter and bake, covered at 350 degrees for 30 minutes. Uncover top with mini marshmallows and bake until marshmallows are browned. Spoon brown sugar syrup over mixture before serving. Serves 6 to 8.
