FRENCH FRIES 
3-4 lg. red potatoes
butter
oil
salt

Wash potatoes. Cut into 1 inch cubes. Leave skin on. Place in saucepan, cover with water. Bring to a boil and cook until slightly tender. Drain off water and set pan over low heat to dry.

Melt butter and oil in heavy skillet. When hot add potatoes and fry until golden brown. Drain on paper towels and sprinkle with salt.
