TUNA FISH "PUDDING" | |
2 med. onions 3 garlic cloves 2 tbsp. hot crushed pepper (red) 4 (6 oz.) cans tuna fish (flaked and drained) 1/4 c. olive oil 1 Portuguese Vienna bread 5 eggs (separated between yolk and white) Fresh parsley Black olives (pitless) Bread crumbs 1. Brown 2 medium onions, chopped, and 3 garlic cloves, chopped, in 1/4 cup olive oil. 2. Add to mixture 2 tablespoons hot crushed red pepper and 4 flaked cans of tuna. Save juice drained. 3. Take Portuguese Vienna, break into pieces and soak in juice/water from tuna, until fully absorbed. 4. Add to tuna mixture, once fully absorbed. 5. Take 5 egg whites (beaten) and set aside. 6. Add the 5 egg yolks (beaten) and add to tuna mixture. Mix and brown, stirring constantly. 7. Add fresh parsley and chopped black olives. 8. Remove entire mixture from heat and mix in beaten egg whites. 9. Place into well greased baking dish, preferably Portuguese fish mold. 10. Sprinkle with bread crumbs. 11. Bake 30-45 minutes at 350 degrees. |
