“OVEN FRIED CHICKEN” IS IN:
NEXT RECIPE:  OVEN RUMP ROAST

OVEN FRIED CHICKEN 
8 boneless skinless thighs
2 tbsp. paprika
2 cups all-purpose flour
2 tsp. salt
1/4 tsp. garlic powder
1/4 cup (1/2 stick) butter

Combine all ingredients except chicken and butter. Put butter in 9x13-inch oven baking dish and melt.

Coat chicken with dry mixture and place in pan with melted butter.

Cook at 425°F for 20 minutes. Remove from oven and turn chicken over.

Cook for an additional 20 minutes at 425°F.

Thank you! This is the recipe (except that we cut up the chicken and left on the skin) that mom made us many times while we were growing up. The crunchy goodness in the corners of the pan was always prized. So much butter! Julia Child would be proud. We are making it tonight for a party, but will have to go mow the lawn with a push mower after to make up for all the calories! (How did they get away with that back when???)

My wife just had our daughter Friday Dec 4th. We are home as of lastnight, Dec 7th. I NEVER cook any chicken besides grill (my favorite) This seems fool-proof! This may sound dumb, but, I am just learning how to cook for my son and myself and I get everything EXCEPT, do you add the melted butter to the bottom of the pan BEFORE adding the chicken or add it to the top of the chicken after coating it with the dry mix.

Great basic recipe. I have tried oven fried chicken many times and it never turned out crispy. I did make some changes. I seasoned the flour with salt, pepper, garlic and paprika. I sprayed the spots where I put my boneless skinless chicken breast with "I Can't believe It's Not Butter". Everyone loved it. I will use this recipe again.

My 11 yr old son who is the chef in the family just served this to me and it was wonderful! He changed it, instead of using paprika he used cajun seasoning and it was GREAT!! Will make this again and he added it to his recipe file!!!!

Great recipe... You could easily half the coating recipe for that amount of chicken... For the ultimate crispiness don't crowd the pieces and and make it 25 mins per side for skin on thighs and drumsticks. Yummo!
