“CHICKEN ALFREDO” IS IN:
NEXT RECIPE:  CHICKEN CACCIATORE

CHICKEN ALFREDO 
2 lbs boneless chicken breasts
4 tablespoons oil
1/4 cup (1/2 stick) butter
1/2 cup Parmesan cheese, grated
3/4 cup heavy cream
salt and pepper, to taste
1 (1 lb.) box fettucine

Heat oil in a 10 inch skillet. Cut chicken breast into strips. Add salt and pepper. Fry on medium heat until cooked through.

Sauce:

Melt butter in saucepan; add cream and cheese. cook over low heat, stirring constantly. Do not boil.

Cook fettucine in 3 quarts boiling water. Mix chicken and Alfredo sauce together. Drain noodles. Put sauce and chicken over noodles.

6 servings.

Mmmmm Mmmmm Good!! I have never made Chicken Alfredo before so I decided to try it and I am so glad I used this recipe, I doubled it because I like a lot of sauce and I added a little bit of italian seasoning to the chicken while it was frying. This by far is the best chicken alfredo I have ever had. Thank you so much for sharing it! :)

Great, simple recipe.

I added 1 box frozen chopped broccoli.
I also marinated the chicken overnight in olive oil, garlic powder, lemon pepper (actually lemon juice, salt & pepper), and rosemary. Came out great.

I think it could use just a bit more sauce though, maybe 1.5x those ingredients. Otherwise perfect and just like my mom used to make. I imagine you could get away with substituting some milk or half-and-half for some of the cream to reduce the fat content, but the Parmesan does melt better in cream vs milk, so experiment with that on your own.

I never like to try anything new especially food. A friend was having the shrimp alfredo @ work yesterday. The name "Alfredo" got me curious thus, started my research for the "ALFREDO SAUCE", all recipes found were comparable. Just made the chicken version & it's delicious. Hummmmm!!! Am sure I do not want to try the restaurant made ones. Simple :)
