ZUCCHINI BREAD 
3 eggs
1 c. oil
2 c. sugar
2 c. fresh zucchini (pulp)
3 tsp. vanilla
3 c. flour
1 tsp. salt
1 tsp. baking soda
3 tsp. cinnamon
1/4 tsp. baking powder
1 c. drained pineapple
1/2 c. nuts

Mix first 3 ingredients and then add the remaining ingredients. Beat well. Pour into greased and floured cookie (big) sheet. Bake 50-60 minutes in 350 degree oven.

ICING:

1/4 c. Crisco
1 egg white
1 tsp. vanilla

Beat then add 2 tablespoons milk and stir in powdered sugar with mixer.
