CARROT RICE CASSEROLE 
2 1/2 c. finely shredded carrots
2 c. cooked rice
1 1/4 c. milk
1 tbsp. grated onion
1/2 tsp. pepper
8 oz. grated Cheddar cheese
2 eggs, well beaten
1 tbsp. melted butter
1 tsp. salt

Combine carrots, cheese, and rice in a greased casserole. Mix eggs, milk, butter, onion, salt and pepper. Add to carrot mixture and blend thoroughly. Cover and bake 40 minutes at 350 degrees. Serves 6 to 8.
