GRANDMA CARUSO'S LASAGNA 
1 1/2 med. onions, chopped
1 clove garlic, minced
5 tbsp. olive oil
1 (No. 2 1/2) can tomatoes
2 (6 oz.) cans tomato paste
1/2 c. water
1/4 tsp. salt
1 lb. Ricotta or cottage cheese
1/2 lb. Mozzarella cheese, shredded
4 eggs, well beaten
1/2 tsp. nutmeg
1 lb. mixed ground pork & beef (or all beef)
1 pkg. lasagna noodles, cooked
Grated Parmesan cheese

Saute 1 onion and garlic in 2 tablespoons olive oil until yellow and clear. Add tomatoes, tomato paste, water and salt. Simmer, covered for 2 hours. Stir occasionally. Combine Ricotta, Mozzarella, eggs and nutmeg; blend well. Combine remaining onion and ground meat; brown in 3 tablespoons olive oil. Layer in baking dish (of your choice), tomato sauce, cooked noodles, cheese sauce and meat mixture. Repeat and end with noodles and tomato sauce. Sprinkle with grated cheese. Bake at 375 degrees for approximately 40 minutes. Serves 8.
