BREAKFAST CASSEROLE 
1 can chopped green chilies
1 1/2 c. Cheddar fat free cheese, shredded
1 lb. lowfat sausage (3 grams per patty), cooked & crumbled
2 c. egg substitute
1 c. skim milk

Line bottom of square baking dish (8 x 8 inch) with green chilies, half of cheese, then another layer of chilies, sausage, top with cheese. Refrigerate overnight. Before baking, beat egg substitute and milk. Pour over casserole and bake at 400 degrees for 30 minutes.

After cooking lean sausage, place in a colander and rinse with hot water. Washes away any excess fat. Shake dry then continue with recipe.
