FRIED RICE 
6 slices bacon (see Variation 1)
2 eggs, beaten
1/2 sm. onion, sliced
1 c. cooked green peas (Variation 2)
2 green onions, shredded
2 tbsp. soy sauce
1/2 tsp. sugar
4 c. cooked whit rice
Salt and pepper to taste

Fry bacon; remove from pan, cool, and dice. Cook eggs, remove from pan and cut into shreds. Saute onion until tender. Stir in bacon, eggs, vegetables, soy sauce, sugar, and rice. Mix well and add salt and pepper to taste. Serve hot.

VARIATION 1:

Cooked shrimp, diced cooked ham or pork, beef or shredded chicken may be used in lieu of bacon.

VARIATION 2:

Green vegetables such as sliced cabbage, green bans, edible pea pods, bean sprouts or celery may be substituted for the green peas.
