SHRIMP CASSEROLE 
1 to 1-1/2 lbs. shrimp, cleaned & lightly cooked
1 c. uncooked minute rice
1 c. sliced Colby or Velveeta cheese, diced
3/4 c. sliced stuffed olives, drained
1 c. mushrooms, sliced
1 tsp. salt
1 c. water
1 onion, cut fine
1 med. size can tomatoes
1 tbsp. salad oil

Mix all ingredients except shrimp in large casserole; mix well. Bake at 325 to 350 degree oven for 45 minutes; add shrimp slightly cooked. Place in oven for 15 more minutes.
