TEX-MEX CASSEROLE 
1 lb. ground beef
1 pkg. taco seasoning mix
3/4 c. water
1 med. onion, chopped
1 can refried beans
10 oz. frozen corn
1 c. crushed corn chips
8 oz. shredded Cheddar or Cojack cheese

Brown ground beef. Drain fat. Add taco seasoning, water, refried beans, onion and corn. Simmer 5 minutes. Sprinkle corn chips in bottom of 8x8 inch casserole dish. Pour beef mixture over crumbs. Top with grated cheese. Bake at 350 degrees for 25-30 minutes or until cheese is melted.
