ITALIANO BEEF CASSEROLE 
1 1/2 lbs. ground beef
1/4 c. chopped yellow onion
2 (8 oz.) cans tomato sauce with 1/2 c. water
1 tsp. crushed parsley flakes
1/2 tsp. ground oregano
1 tsp. basil
1/2 tsp. salt
1/4 tsp. black pepper
2 (10 oz.) pkgs. spinach, thawed & drained well
2 c. Ricotta cheese
8 oz. Mozzarella cheese slices

Brown beef and onion; drain fat. Stir tomato sauce, parsley, oregano and basil, 1/4 teaspoon salt and pepper. Simmer about 10 minutes. Combine spinach, cheese, Ricotta and 1/4 teaspoon salt. Spoon spinach mixture around edges of 13"x9"x2" dish; pour beef mixture into center. Cut Mozzarella slices each into 3 strips. Arrange these into a lattice design over meat. Bake at 350 degrees for 45 minutes. Serves 8.
