BEEF CASSEROLE ITALIANO | |
1 lb. ground beef 1/4 c. chopped onions 2 (8 oz.) cans tomato sauce 1 tsp. parsley flakes 1/4 tsp. oregano 1/4 tsp. basil 1/4 tsp. salt 1/4 tsp. pepper 2 (10 oz.) frozen chopped spinach 2 c. ricotta cheese 1/4 tsp. salt Brown beef and onions; drain off fat. Add tomato sauce, parsley flakes, oregano, basil, salt, and pepper; set aside. Thaw and drain completely spinach. Add cheese and salt. Spoon spinach mixture around 13 x 9 pan. Pour beef mixture into center leaving a 2 inch border of spinach showing on all sides. Cut Mozzarella or cheddar cheese into narrow slices and arrange in a lattice pattern over beef. Bake at 375 degrees for 20 minutes. Serves 8. |
