“GOLDEN CORN BREAD OR MUFFINS” IS IN:

GOLDEN CORN BREAD OR MUFFINS
1 cup yellow corn meal
1 cup flour
2 1/2 tsp baking powder
1/3 cup sugar
1 tsp salt
1 egg
1 cup milk
3 tablespoons melted butter or shortening

Preheat oven to 375°F.

Combine corn meal, flour, baking powder, sugar and salt until well mixed and no streaks remain.

Beat egg well, add milk. Pour milk and egg mixture into the dry ingredients, stirring until mixed. Add melted butter or shortening.

Bake in a well-greased shallow pan in oven or in heated muffin tins. Well seasoned cast iron muffin tins or frying pans work well. Bake until a toothpick inserted in center comes out clean (about 20-25 minutes for muffins, depending upon size, and about 45 minutes for a frying pan. Baking time depends upon the kind of pans used, how hot the pan is when you start and your oven, so use your own good judgment.

Amazing muffins! I've never made cornbread before and I will keep this recipe for the rest of my life! Little tip, I used 4 tbsp. butter instead of 3, it made them very rich! Highly recommended!

Awesome, turned out great, even though I ran out of regular corn bread flour, had to use instant corn bread flour.

Easy and quick. Added honey to the mixture. Also drizzled honey on top after it was finished. I give this recipe an A

Wonderful Corn Bread. Just like my Grandmother Ethel used to make when I was a kid in Sharp, Texas.

It is good. A little dry, though I am not sure what to do to make it more moist. I cooked mine in mini muffin pans and it took about 20-22 min. I added corn in mine.

Delish! Tonya, there is some magic when you cook it in a cast iron skillet that makes it moist. Don't know the science behind it, but comes out perfect every time!

Came out perfect! Nice to have with a good home cooked meal. I cooked mine in a round cake pan and lined it with parchment paper. I sprinkled sugar on top and it was delicious! Always good with some honey too!

Try adding jalapenos peppers, chopped or halved. Serve with sweet corn relish instead of butter.

 Natalia (New York) says:
This recipe is relish. But instead of milk, I put orange juice. It gives the muffins a citrusy taste.

 Sara (Colorado) says:
Delicious and easy! I added 1/3 cup applesauce to recipe to make it very moist.

This was my first attempt at "from scratch" corn bread! They are wonderful! Note I am not a cook so specifying self rising flour would ave been helpful. My daughter loved it too and has never liked any other corn bread!
