“GOLDEN CORN BREAD OR MUFFINS” IS IN:

GOLDEN CORN BREAD OR MUFFINS 
1 cup yellow corn meal
1 cup flour
2 1/2 tsp baking powder
1/3 cup sugar
1 tsp salt
1 egg
1 cup milk
3 tablespoons melted butter or shortening

Preheat oven to 375°F.

Combine corn meal, flour, baking powder, sugar and salt until well mixed and no streaks remain.

Beat egg well, add milk. Pour milk and egg mixture into the dry ingredients, stirring until mixed. Add melted butter or shortening.

Bake in a well-greased shallow pan in oven or in heated muffin tins. Well seasoned cast iron muffin tins or frying pans work well. Bake until a toothpick inserted in center comes out clean (about 20-25 minutes for muffins, depending upon size, and about 45 minutes for a frying pan. Baking time depends upon the kind of pans used, how hot the pan is when you start and your oven, so use your own good judgment.

Love the simplicity of this recipe. I substitute brown sugar and buttermilk. I also add Thai peppers, creamed corn, and shredded cheese. This never fails and is always a hit at a potluck, family dinner.

Very easy to make and delicious on a cold day with a bowl of soup. I did substitute honey for the sugar and added one teaspoon of chili powder to spice it up a bit and used 4 tbsp. butter. yum! thx for the recipe and will make every time we make soup.

This was my first attempt at "from scratch" corn bread! They are wonderful! Note I am not a cook so specifying self rising flour would ave been helpful. My daughter loved it too and has never liked any other corn bread!

Came out perfect! Nice to have with a good home cooked meal. I cooked mine in a round cake pan and lined it with parchment paper. I sprinkled sugar on top and it was delicious! Always good with some honey too!
