CARAMEL APPLE DE LA JOSIE 
This is my favorite snack before going to swim practice!

1 apple
2 tsp. butter
1 tbsp. brown sugar

Scoop out apple center (a strawberry corer works best) until you get all the seeds out and you have a pit big enough to hold the butter and brown sugar. With a knife, poke slits in the apple (so it bakes evenly). Pack butter and brown sugar in the apple hole. Place on a baking sheet and bake at 350°F for 15 to 20 minutes. Let cool for 5 minutes before eating.

Tip: If you take it out of the oven and the butter and brown sugar is watery scoop some more brown sugar in the pit and give it a stir. Enjoy!
