CHICKEN ALA LILY 
6 deboned, skinless chicken breasts
6 slices Monterey Jack cheese
6 whole, peeled canned mild green chiles
6 slices of ham
Dijon mustard
Paprika
Ranch dressing (optional)

Using the side of a saucer, pound chicken until pieces become flat and thinner. Brush one side with mustard, and top with a piece of ham, a chile, and a piece of cheese.

Roll up as tightly as possible and lay seam side down in a pan that has been lightly sprayed with Pam. Sprinkle with a little paprika. Bake covered at 350 degrees for 45 minutes, then uncover for another 15-20 minutes. Put a teaspoon of Ranch Dressing on each piece just before serving.
