CHICKEN PARMESAN 
2 eggs, slightly beaten
1 tsp. salt
Dash of pepper

Combine; set aside.

4 whole chicken breasts, split, skinned and boned
1 c. fine dry, unseasoned bread crumbs
1/2 c. (each) oil, grated Parmesan cheese
4 c. tomato sauce
1/2 tsp. (each) basil, oregano
1 tbsp. parsley
1/4 tsp. garlic powder
2 tbsp. butter
8 oz. Mozzarella cheese, sliced or shredded

Dip chicken breasts into egg mixture, then crumbs. Heat oil in skillet; brown chicken on both sides and remove to a casserole dish sprayed with Pam. Stir tomato sauce and herbs in a pot; heat until boiling; then simmer for 10 minutes. Stir in butter and pour sauce over chicken; sprinkle with Parmesan cheese; cover and bake at 325 degrees for 30 minutes. Uncover, place Mozzarella cheese on top and bake 10 minutes more.
