CHICKEN CACCIATORE 
1 lb. boneless chicken strips
1 sm. onion, diced
1 clove garlic, minced
2 tbsp. oil
24 to 32 oz. tomato sauce
1/2 tsp. oregano
1/2 tsp. basil
1/8 tsp. ground red pepper
1 c. green pepper strips
2 to 3 tbsp. grated Parmesan cheese
2 c. cooked brown rice

Or use 1 jar (28 oz.) spaghetti sauce.

Brown chicken, onion and garlic in oil. Add tomato sauce, seasonings, Parmesan cheese and green pepper. Bring to a full boil. Simmer for 5 minutes. Add rice and simmer 3 minutes. Serves 4.

Used in Home Economics 7th grade classes & is a favorite with everyone.
