CREAM CHEESE MINTS 
1 (8 oz.) pkg. cream cheese
2 tbsp. half & half
1/4 c. butter, softened
1 (15 oz.) pkg. white frosting mix
1 tsp. peppermint extract
Food coloring, as desired

Combine cream cheese, half & half, and butter in heavy bottomed saucepan. Stir over low heat until cheese mixture is soft, creamy and butter is melted. Blend in the frosting mix and stir. Add peppermint extract and food coloring of your choice. May divide to make different colors.

Roll into balls or drop by spoonfuls on wax paper-lined cookie sheet. Press with fork or cookie stamp for design. Let mints stand, uncovered at room temperature until firm and outside is dry. Inside should still be creamy.
