CREAM CHEESE MINTS 
1 (8 oz.) pkg. cream cheese
2 tbsp. half & half
1/4 c. soft butter
1 (15 oz.) pkg. white creamy frosting mix
1 tsp. peppermint extract
Food coloring (if desired)

Combine cream cheese, half & half, and butter in a heavy bottomed saucepan, then mix over low heat until the mixture is soft and creamy. Blend in the frosting mix; add the peppermint extract and food coloring. You may divide the mixture into 2 or 3 parts, making each a different color. Roll mixture into balls or drop by teaspoonfuls onto a waxed paper lined cookie sheet. For a decorative design, press the top with a fork or a cookie cutter. Let mints stand, uncovered, at room temperature until the outside is firm. If the mixture is too thin, add powdered sugar.
