BRAN FLAX MUFFINS 
1 1/2 c. oat flour
3/4 c. flax seed ground
3/4 c. oat bran
1 c. brown sugar
2 tsp. baking soda
1 tsp. baking powder
1/2 tsp. salt
2 tsp. cinnamon
1 1/2 c. shredded carrots
2 shredded apples
2 bananas
1/2 c. raisins
1/2 c. chopped nuts
3/4 c. skim milk
1 tsp. vanilla

Mix together flour, flax seed, bran, sugar, baking soda, salt and cinnamon in a large bowl. Stir in carrots, apples, raisins and nuts. Get combined milk, beaten eggs and vanilla. Pour liquid ingredients into dry ingredients. Stir until moistened; do not overmix. Fill muffin cups 3/4 full.

Bake at 350°F for 15 to 20 minutes.

Makes 15 medium-size muffins.

Ground flax seed can be substituted for shortening or cooking oil at a ratio of 3 to 1 in baked goods. For example, 1 1/2 cups of flax seed can replace 1/2 cup butter, butter or cooking oil in a recipe.

Flax seed is high in the Omegas and fiber.
