"LOW CAL" BRAN MUFFINS 
1/2 c. applesauce
1 c. honey
2 egg whites
2 c. skim milk
2 c. whole wheat flour
3 tsp. baking soda
1/2 tsp. salt
2 c. bran
1 c. oat bran
1 c. boiling water
Raisins, nuts, grated carrots, apples, berries (as desired)

Pour boiling water over bran and oat bran. Let stand while creaming applesauce and honey. Add egg whites and milk. Add bran. Add flour, soda and salt. Add nuts, berries, etc. Spray muffin cups with Pam. Bake in 400 degree oven for 20-25 minutes. Makes about 24 muffins.
