CRAWFISH FETTUCINI 
3 chopped onions
3 stalks celery, chopped
3 chopped bell peppers
3 sticks butter
1/4 c. flour
3 tsp. parsley
3 cloves garlic
1/2 pt. half and half
2 lb. crawfish
1 lb. Velveeta cheese
1 can Old El Paso jalapeno relish
1 lb. fettucini noodles
Salt and pepper
Parmesan cheese

Saute onions, peppers and celery in butter; add flour. Cover and cook 15 minutes; stir often. Add parsley and crawfish; cook 15 minutes. Add half and half, garlic, cheese and seasoning. Cook 30 minutes. Cook noodles; separate and drain. Add to mixture. Bake 15 minutes in 350 degree oven, topped with Parmesan cheese.
