CRAWFISH FETTUCINI 
3 med. chopped onions
1 med. chopped bell pepper
1 1/2 sticks butter
1/4 c. flour
3 tbsp. parsley
2 to 3 lbs. crawfish
3 tsp. sliced jalapeno peppers
1 lb. Velveeta cheese
1 c. evaporated milk
3 cloves garlic
1 pkg. egg noodles
2 tbsp. Parmesan cheese

Saute all vegetables in butter until soft, add flour, parsley, and meat. Cook for 15 minutes. Add peppers, cubed Velveeta, evaporated milk and garlic. Cook 15 minutes. Fold cooked noodles and sauce together, place in glass 9x13 inch baking dish. Cover with Parmesan cheese and bake in a 350 degree oven for 15 minutes. Can substitute shrimp for crawfish when out of season.
