FUNNEL CAKES 
1 egg, beaten
3/4 c. milk
1 c. all-purpose flour
1 tsp. baking powder
1/4 tsp. salt
1/8 tsp. cinnamon
Oil for deep frying

Pour oil into large heavy skillet to depth of 1 inch. Heat to 360 degrees over medium high heat. (An electric skillet works great.)

In small bowl, combine egg and milk. Lightly spoon flour into measuring cup; level off. Add flour, baking powder, salt and cinnamon. Beat until smooth. Holding a finger under funnel opening, pour 1/4 cup batter into kitchen funnel. Starting in center of skillet, allow batter to run through funnel into oil and circle around to form spiral shape. Fry about 1 minute on each side or until golden brown. Drain on paper towels.

If batter thickens upon standing, stir in 1-2 tablespoons milk, as necessary so batter will flow freely through funnel. If desired, sprinkle lightly with powdered sugar or serve with syrup or jelly. 6 funnel cakes.
