FUNNEL CAKE 
2 c. plain flour
1 tsp. baking powder
1/2 tsp. salt
2 eggs
1 1/2 c. milk

Mix. Heat cooking oil in a deep fat fryer or skillet until very hot. Put batter into a funnel. (Be sure to cover the spout with one finger.) Then, holding the funnel over hot oil, release some of the batter in circular motion, then criss-crossing to form one funnel cake. Cook on both sides. Remove to paper towels. Sprinkle with powdered sugar. Serve warm.
